Meal stretching


The Yellow Farmhouse Weekly Menu Plan
for November 12-18


Notes: The meal stretching continues. We’ve added more side dishes to our dinners to make them stretch farther…  I don’t always note on the menu plan what all we’re having for side dishes as I often am pulling things out of the fridge and throwing something extra together.
I can tell you that the plans for side dishes this week are as follows:
Heirloom tomatoes- yes, we still have tomatoes from our garden. I thickly slice them and serve them as a side dish for most meals. Homemade bread or rolls is another meal stretcher. Homemade pickles- including: dill, bread-n-butter and olive pickles. We were able to put up a lot of canned pickle-y goodness and are enjoying the bounty. We also have been adding applesauce to our evening meals.
Also this week- greens salad. Most of our meals seem to lend themselves to a side of salad this week. Our salads are romaine lettuce, sliced tomato, chopped mushroom, green onion and dressing.
We use to have one to two side dishes with a meal, now we regularly serve three or even four to round out our meals. We're eating larger portions of veggies and fruits and smaller main dishes and that's good for us.

Monday
Breakfast:  Homemade oatmeal with blueberries & cherries, toast
Lunch: Diner dinner (cleaning out the fridge)
Dinner:  Peppy Mac, greens salad, homemade pickles
Tuesday
Breakfast:  Homemade Yogurt with fruit and granola, toast
Lunch: Peppy Mac cups, toast points, apple sauce
Dinner:  Sun-dried tomato Fettuccini Alfredo with vegetables, homemade garlic bread, greens  salad
Wednesday
Breakfast: Pumpkin cream cheese on English muffins, apple slices
Lunch: Diner Dinner
Dinner:  Sock-a-rooni, homemade bread, steamed green beans or greens salad
[Sock-a-rooni is a pasta sauce from Newman’s Own that we add browned pork sausage too for added zing and serve over spaghetti noodles]
Thursday
Breakfast:  Homemade oatmeal with peaches, toast
Lunch: Dinner Dinner (choice of leftovers)
Dinner:  Santa Fe Casserole, greens salad
Friday – Family Night
Breakfast:  Cold Cereal, toast
Lunch: Potluck Lunch @ Homeschool group- Bringing: Homemade bread
Dinner:  Mama Queens: Chicken fingers, country gravy, fries & Texas toast
Saturday 
Breakfast:  Daddy Cooks! – Eggs, bacon, toast
Lunch: Leftover Smorgasbord
Dinner:  Leftover Smorgasbord
Sunday
Breakfast:  Coco Wheats with dried cranberries, toast
Lunch: Thankful Dinner @ Church: Bringing- triple fudge brownies & Homemade Olive Pickles
Dinner: Dinner with friends to celebrate a special birthday

Beverages for the week:
Milk, Water, coffee, Cider, apple cinnamon water, cranberry pomegranate juice
Snacks for the week:
cookies, fresh fruit- apples, homemade salsa & chips, brownie batter dip & graham crackers, pretzel sticks, cranberry friendship bread
 Desserts for the week:
Ice cream sundaes, chocolate milk shakes, mug O' brownies
