Productivity and Pie

Ah, a break in the weather and I’m feeling productive once again…
Laundry is going
We picked approximately 6 quarts of red raspberries this morning
Snapped about three quarts of beans
Blanched and packaged and froze said beans
Made two raspberry cream pies
Froze about 2 quarts of berries
All before lunch.

Here’s my very favoritest pie recipe:

Berry Cream Pie
{From Gooseberry Patch}

3 c. blueberries or raspberries [or berry of your choice]
9-inch pie crust
1 c. sugar
1/3 c. all-purpose flour
1/8 t. salt
2 eggs, beaten
1/2 c. sour cream

Topping: (combine all 3 together until crumbly)
1/2 c. sugar
1/2 c. all-purpose flour
1/4 c. butter, softened

Place berries in unbaked pie crust; set aside. Combine sugar, flour and salt. In a separate bowl, beat eggs and sour cream together; add to flour mixture. Spoon over berries. Sprinkle topping over pie and bake at 350 degrees for 50 to 55 minutes. Makes 6 to 8 servings. 
Refrigerate any uneaten pie… if you’re lucky to have any uneaten pie left….


My Sassafras and I made two pies... one for PawPaw {my pop} and one for Daddy.... its one of their favoritest pies too....
