What's in the preservation room? Delicious Jams and Jellies.

Today is Strawberry Freezer Jam Makin' Day here at the Yellow Farmhouse...
Ms. Books and I spent a good portion of our day making beautiful, tasty, sticky, strawberry messes...
Some to keep...
and some to share...
All in the name of Jam.

Strawberry Freezer Jam

1 quart strawberries, washed, hulled and sliced
4 cups sugar
3/4 cup water
1 (1.75 oz) box  powdered fruit pectin




Wash, hull and slice your berries


Mash strawberries with potato masher until slightly chunky (not pureed). Your mashed mixture should be approximately 2 cups of crushed strawberries. Mix crushed strawberries and sugar in large bowl. Let stand at room temperature 10 minutes, stirring occasionally.
Mix water and pectin in 1-quart saucepan. Heat to boiling, stirring constantly. Boil and stir one minute. Pour hot pectin mixture over strawberry mixture; stir constantly for three minutes.
Immediately spoon mixture into freezer containers, leaving about a 1/2-inch head space. Wipe rims of containers; seal. Let stand at room temperature for 24 hours to set jam. 
Store jam in freezer and thaw when needed. Jam should last about 3 weeks in your fridge.... it never stays in our fridge that long though.



The house smells wonderfully strawberry... beautiful containers full of ruby red goodness sit on my kitchen table...
the jam needs 24 hours to set...
