Recipe: Eggs in a Basket

The following is one of Ms. Books favorite breakfasts to cook for the family. And consequently, one of our most favorites to eat!

Eggs in a Basket
1 tube refrigerated biscuits
10 eggs (equal to number of biscuits)
Shredded Cheese
Optional: crumbled cooked bacon
Grease a muffin pan with pan spray. Turn oven to 400 degrees. Press biscuit dough into each section of a muffin pan forming a little “cup”. Use one biscuit for each muffin section in pan. Break an egg into each biscuit “cup”. Bake for 15 minutes or until eggs are set and biscuits are lightly browned. Sprinkle with cheese immediately after removing from oven.
Note: If all muffin holes are not used- fill empty holes with some water.
Serve with fresh fruit.
