My recipe for Broiled Tomatoes

Mr. Steady has requested my broiled tomatoes to go with the chicken crescent squares for dinner on Tuesday night. I love making this recipe when we have an abundance of tomatoes fresh from the garden… I love the taste of garden fresh tomatoes. We’ll make do with some from the grocer this week. What really sets off this recipe, besides fresh from the garden tomatoes, is fresh mozzarella cheese in thick slices- that’s fresh, not pre-shredded. [You’ll find it by specialty cheeses usually located in the deli area.]

Amy’s Broiled Oregano Tomatoes

4 large tomatoes
2 oz. butter- softened
1 TBSP chopped fresh oregano (1 ½ tsp dried)
Black Pepper
2 TBSP Grated Parmesan Cheese
4 slices Mozzarella Cheese

Cut tomatoes in ½ horizontally and place in shallow baking dish. Beat butter with oregano, pepper, salt and parmesan in a bowl. Spread butter mixture over cut tomatoes then top with slices of mozzarella. Broil under medium heat for 5 minutes or until topping is golden.
